Dig The Beach Tee's On Sale! Get yours before the seasons over!


We have a great recipe for your summer cookout! This Grilled Swordfish with Coconut Skewers will be the hit of the party!

Ingredients

Sauce:
1/2 can unsweetened coconut milk
2 tablespoons sweetened cream of coconut (recommended: Coco Lopez)
1/4 cup fresh or bottled key lime juice
1 serrano chile, coarsely chopped
1-inch piece ginger, peeled and chopped
2 teaspoons finely chopped fresh lime zest
1 cup canola oil
1/4 cup unsweetened dried coconut
1/4 cup chopped cilantro leaves
Salt and freshly ground black pepper

4 swordfish steaks, 8 ounces each, cut into 1-inch dice
16 to 20 wooden skewers, soaked for 20 minutes
Canola oil
Salt and freshly ground black pepper
Shredded unsweetened dried coconut, lightly toasted
Cilantro leaves

Directions

Sauce:
Place coconut milk, cream of coconut, key lime juice, serrano chile, ginger, and lime zest in a blender and blend until smooth; with the motor running, slowly add the oil and blend until emulified. Pour the mixture into a bowl and fold in the coconut and cilantro. Season with salt and pepper, to taste.

Swordfish:
Heat grill to high. Skewer 1 piece of swordfish onto each skewer. Brush swordfish on both sides with oil and season with salt and pepper. Grill swordfish for 4 to 5 minutes on each side or until just cooked through. Spoon some of the sauce onto a platter and top with the skewers. Drizzle some more of the sauce lightly over the swordfish and garnish with coconut flakes and cilantro.

We will be at our last event of The Dig the Beach Series this weekend in Ft. Lauderdale. Dig the Beach - Siesta Key Wrap-Up


Team Shore Thing overcame the harsh elements of hard packed sand and uncomfortable humidity as the sun blazed down on them at the Dig the Beach Event in Siesta Key this weekend. Two days of challenging matches and tough competition set the stage for the finals on Sunday in front of a throng of spectators. "Ooohs and awwws" came from the crowd as Adrian performed his patented sky ball serve, and Steve's 8ft. wingspan covered the entire net. The event took in thirty professional men's teams with Steve and Adrian finishing on top. We are very proud of these two as they continue to dominate while their opponents give it their all in their attempt to knock them out.

There are two Dig the Beach Events left to come out and show your ShoreThing support as the Best Team on the East Coast takes down their competition. The next two will be in Fort Lauderdale on July 23-24 and then the following weekend July 30-31st. The sand in Fort Lauderdale reaches temperatures that are unbearable to walk on unless your feet are protected.
